SENJA, meaning sunset, mirrors the diverse hues with deep complexity, vibrant fruit
sweetness, and a rounded body. Blending techniques and natural inoculants from bacteria and fungi contribute to this unique taste profile. Fermentation spans 5 days in 1000L water tanks with inoculants, followed by 2-4 weeks of sun-drying on raised beds until reaching 11% moisture. A symphony of flavors awaits in every sip.
